Filipino Food with a Twist at Kusina Moderne

Basing on the name itself, Kusina Moderne is basically a restaurant serving modern, reinvented Filipino recipes that will surely take you down memory lane and tickle your taste for something new. 




Mechado Tacos P195

My official, first food for the day was the mechado taco and I was immediately mind-blown. That soft and tender braised beef mechado was more flavorful than I expected. It had a nice play of sweet and salty flavors that later on combined so beautifully with a bit of calamansi juice. I also loved that it had a fried wanton for a taco shell as it was thin and crispy and it highlighted the flavor of the filling. It's definitely a must-try!

Adobong Pusit P195

It might not be obvious but there are sauteed squid heads underneath that gorgeous plating and some squid ink adobo sauce. It was a somewhat light starter despite the presence of squid ink, but the best part was that the squids were all cooked to a tender perfection. 

Embutido Scotch Egg P195

Another dish I never thought I'd appreciate is the embutido scotch egg. It's made with deep-fried chicken embutido with a runny soft-boiled egg inside, served on a bed of banana ketchup. Now, I'm not usually a fan of that kind of ketchup, so seeing the dish with it made me have some reservations about its taste, but I was surprised that I liked all of the components altogether.  

Lumpiang Sariwa P200

The Filipino-style spring rolls tasted far from my favorite lumpiang sariwa, but it was pretty loaded with veggies. If only I removed the excess garlic (since I do not like raw garlic), I think I would've like it way better.

Binagoongang Baboy P395

My second top pick from Kusina Moderne is their binagoongang baboy. It's roasted pork belly on roasted eggplant puree, served with green mango and radish salad, and drizzled with binagoongan sauce. I don't normally eat this dish because I find its flavor really strong and overpowering, but somehow Kusina Moderne was able to incorporate all the elements so beautifully. The bagoong had a subtle but delicious flavor.

Isda tanigue P395

For a simpler and lighter dish, a pan-seared tanigue with vegetables and pumpkin puree is the best bet for you. 

Tuna Belly with Chimichurri P450

There's just so much color in this one plate! This broiled and charred tuna belly's perfect, smoky taste was highlighted even more with the help of the chimichurri sauce. 

Sotanghon P345

You might be seeing this dish as sotanghon, but it tasted a lot like the Pinoy-favorite batchoy to me. Nothing bad about that, especially since it was executed well. It's a great soup to depend on on rainy days. 

Cheesecake Flan P175

Kusina Moderne also took desserts too seriously, starting with their cheesecake flan. It's a dessert we are a lot familiar with, except it's better. It's cheesecake and flan in one, topped with sweet, diced mangoes, vanilla ice cream, chopped walnuts, and Marie crumble. There's simply nothing on this plate that will go to waste. NOTHING. 

Sans Rival P215

Last but not least, these cute, round, balls of desserts are your favorite Filipino desserts in disguise. Guessed what they are yet? They're Kusina Moderne's version of sans rival. Soft, walnut meringue on the outside that's easy to break open using a fork, and delicious, not-so-sweet buttercream on the inside.




All these combination of both intense and subtle flavors (especially all those garlic from the lumpiang sariwa) just made me want to grab a quick and easy palate cleanser! Good thing LISTERINE was there to the rescue! It was a good palate cleanser, plus it helps kill germs that brushing alone cannot handle! They also come in a variety of sizes, and I personally liked the small one I can carry in my bag everyday! They're available in Lazada and stores nationwide. #ListerinePH
