Timeless Filipino Recipes to Try When in Tagaytay

Tagaytay has been our favorite go-to place for a quick getaway or bonding moment with our families. It's a city fairly close to Metro Manila, it's got a terrific view and cold breeze, and something about it just makes us feel calm and at peace. 


There are arguably a lot of other things we love about this city, but I think I speak for everyone when I say that part of why we visit Tagaytay is the food. 



Chef Jasper Versoza
Joining the line up of restaurants you can drive south for is Sartin. Sartin is the newest concept from Josiah's Hospitality Management that opened just last June 23. The restaurant is inspired by the three hometowns of the family - Quezon, Tarlac, and Bacolod. They offer traditional Filipino recipes with a twist, and ultimately, dishes that tell a story. 

Sartin Salad P425
I started my meal with a plate of the Sartin salad. It's a very Pinoy one with mixed lettuce, red radish, tomatoes, cucumber, onions, kesong puti, and dried squid tossed in pineapple vinaigrette. It's that light and refreshing starter filled with different textures and flavors.

Lechon na Ulo ng Baboy P949
The lechon na ulo ng baboy is an all-time Filipino show stopper, but with a twist. It's roasted half pig's head cooked slowly in the oven before being deep-fried, and served with home-made thin breads, salsa, mustard leaves, and burong isda. It is supposed to be eaten with the wraps, similar to a Peking duck wrap.


Jet's Kare Kare P545
Jet's kare-kare is the Versoza matriarch's specialty. It's ox tail, tripe, and meat with special kare sauce and house made bagoong alamang. It's a simple, classic rendition of kare-kare that won't fail to make you happy. I personally loved this with their kalkag rice (which is rice with dried shrimp, chives, and garlic). 


Pata Humba P315
Pork pata, banana blossom, pineapple, saba, potatoes with some star anise and atsuete. 


Valenciana P495
This Valenciana is the Ilonggo's version of paella. It's got turmeric glutinous rice topped with lots of shrimps, pork, chicken, vegetables, and mussels.


Escabeche na Isda P635
Fried fish in a sweet and sour escabeche sauce made with ketchup, ginger, vinegar, , and carrots, plus the cilantro and mango salsa to make it a slightly different, elevated dish.


Pritong Itik P655
Native itik, cooked low and slow with oil, garlic, salt, pepper, herbs and then fried 'til crispy. It's not really everyone's favorite fried chicken, but with all those herbs for flavor, how can you say no?


Grilled Ensaymada P115
The last I was able to try was the grilled house-made ensaymada, and I'm so glad I had enough room for a piece in my belly, because it was heavenly! Their ensaymadas are freshly baked daily. They were soft, not too firm nor airy, and incredibly, deliciously cheesy!





Sartin is a venue for families to share a meal together, to reminisce about the good times, and to create some more memories. Every aspect of this restaurant's concept - from ambiance to food, encompasses a cheerful and heartwarming Filipino family reunion. Iba talaga ang pagmamahalan ng pamilyang Pilipino.
